Chocolate Coconut Liqueur Truffles

If you are a chocolate addict, this cheap and easy chocolate liqueur truffle recipe will really tickle your fancy. These can be made ahead of time and stored in your freezer. Unexpected company will be very impressed when you serve these with some piping-hot Irish coffee at just a moment's notice. They can also be served with ice cream and Maraschino cherries for your dinner party. The following recipe makes quite a large batch that will allow you to store ample for future use.
Ingredients:
lb Graham Crackers
cup shredded coconut
cup of raisins
3 tbs honey
2 tbs cold water
cup of Bailey's Irish Cream
1 cup of icing sugar
2 tbs cocoa
1 tbs finely crushed nuts
Method:
-Crush the Graham Crackers using your food processor or blender. Be sure the mix is quite fine. If you do not have a food processor, place them into a plastic bag, cover with a clean cloth and crush them using a rolling pin.
-Combine the crushed graham crackers, crushed nuts, 1/2 of the icing sugar, coconut ,raisins and cocoa together. Mix well.
-Add the honey, water and Bailey's Irish Cream and thoroughly mix until all ingredients are blended together.
-Using a tablespoon, scoop some mixture and roll into a ball, repeat until all mixture is in ball form, then toss them into the remaining icing sugar and gently roll them around until they are completely coated.
You can also roll them in shredded coconut is this is preferred.
Makes approximately 70 bite size truffles.
Note: If you find that your finished recipe is a little too soft to roll into balls, you can also add 1/3 cup of powdered milk. It will depend upon the room temperature for the most part, but I have known people to become a little excited with the Bailey's Irish Cream. If this is the case, or your would deliberately like to add more liqueur, feel free to do so as the powdered milk will stiffen the mixture and add a delicious flavor.
Irish Coffee Recipe: makes 4 cups
4 cups strong, freshly brewed coffee.
3 oz. Whiskey
6 tsp sugar
Garnish with whipped cream and grated chocolate
Chocolate Liqueur Truffles are also a lovely gift idea. As an excellent Father's Day gift, place some tissue paper or cellophane into a small cane basket along with a half pint of Whiskey, some cigars, a deck of cards, a 3 pack of golf balls and some plaid golfer's socks.
For the lady in your life, you may wish to add a small bottle of her favorite perfume, a pair of earrings or a bracelet, a handwritten love letter from you and a small stuffed animal.
